I changed the cron status and security reports to go to a file instead
of defaulting to emailing root. Is there a way to run them manually so I
can verify the files are really being created and populated correctly?

You mean periodic(8)?
Which, not coincidentally, documents how to send the reports to a file
without changing the scripts.
